What it is
Burnt Basque cheesecake comes from San Sebastián in the Basque Country. It is baked crustless at a high temperature until the top darkens well past the point a New York cheesecake would come out, which is what gives it a caramelised top and a loose, almost custard centre. The scorch is the recipe, not an accident.
Ours is on the Sweet Tooth list, alongside the molten chocolate cake and the crème brûlée.
